Autumn is my favourite time of year, I love all the colours,the smell of earth, the cold crispy air and the sound of fallen leafs on the ground when they blow in the wind. But what I love most is all the delicious fruits that I can find I the markets and all the lovely things you can make with them. Big jars of apple jam, plum juice, marinaded pears on a shelf in a dark cupboard that we can take out on cold winter days to remember how colourful and bright these days where.Ahh, how i love the autumn. So this autumn cake is a sour cream cake filled with apple jam with a twist of lemon and cinnamon cream. Lovely flavours together.

A cup of cake

I am not really into this cupcake trend that is now, not because I don't find them nice or uninteresting, just because I am more of a cake person. This cupcake was not suppose to be a cupcake either, it just somehow ended up like one. The original recipe was for a simple flat square cake with blueberries. It looked kind of boring so I decided that for ones I would make cupcakes. Then I went to the shop and they didn't have any blueberries so I ended up with Cherries. I am very happy with the result though they where sooooo tasty, totally delicious. So Vanilla cupcakes filled with cinnamon marinated cherries and topped with cherry cream and cherry/cinnamon syrup i will for sure make again.

This cake was a lot about testing. The lady who ordered the cake said she wanted a cake like the one in the shop for her sons engagement party. And i wasn't sure what to think or what she actually wanted, so after some more phone calls I finally understood which cake she wanted , and yes, she wanted a cake like the one in the shop.
And then it was the decoration, well I didn't get any exact answer on that either. So then after a few more phone calls she said, "I trust you, all the cakes you make are always beautiful" After she said this she got a lot more cake then she asked for, I am not very difficult to flatter :D But back to the cake in the shop. The cake in the shop is actually a very simple cake called Sancha cake, You can find it in almost all shops here in Moscow,it looks like a pyramid that somebody has thrown white and brown painting on. But it taste really delicious. So what I did to make this white and brown painted pyramid cake in the shop to look like this, was to make a normal chocolate cake , take out all the soft parts inside the cake so it became a cake shell, cut the soft cake-parts into pieces and mixed it with sour cream-vanilla cream and pineapple and put it all back again. She became very happy, I became very happy and hopefully somebody will get married and live happily ever after.

Last week I got asked if I could make two cakes for an orphanage here in Moscow , and of course I said yes. Somehow making cakes for children is so joyful it takes so little to please a child while we adults demands so much more.I wonder where we lost this ability, we are so much into our work,career,lack of time and so on that we somehow lost the small pleasures here in this life. Happily cakes normally brings adults and children a lot of joy. I for sure had a joyful time making this two cakes. The sweet lady who ordered the cake said I could make what ever I wanted so I ended up making two of my favourite characters from a very funny Russian cartoon series. I especially like the romantic ram called Barash, he is hopelessly in love with a lovely pig. The pink hedgehog called Ezhik is also a sweet little one.
Since the cake was only for children I made a Rainbow-vanilla cake and filled it with tutti-fruity cream. It became a really a joyful looking cake inside and outside:)

Sometimes some idea for a cake just pops into my head and I cant get peace in my soul until I have made it. This cake is one of those cakes. I have a friend named Ana-Maria who is posting so much beautiful Japanese drawings and other stuff on Facebook . So I guess the idea actually started there, and then I started to remember some Japanese dolls my father brought from Japan from the days he was a sailor, I used to play with them when I was a child. The cake itself also has a small story . Also in my childhood my friends and i used to go to our neighbouring village and buy the best and the hugest ice cream you can imagen, and what we normally used to order was one scoop of chocolate ice cream and one scoop of pistachio ice cream, wonderfully and sinfully tasty. So this cake is in the memory of this wonderful ice cream. So the lowest cake is a Chocolate cake filled with pistachio cream with chopped pistachios, the top cake is a pistachio cake filled with chocolate cream with chopped airy milk chocolate.

This cake I made for a boy who became 4 years old. I could make whatever I wanted. So this was what I ended up with. I wanted it to look like a children's drawing so I tried to remember how i was drawing in my childhood, and i guess it was something like this :) The cake itself is a mild Chocolate cake filled with raspberry jam and a sour-cream raspberry mousse.

This is a small wedding cake for around 10 people. It is always joyous to make weeding cakes, it is so nice to know you will take a small part in someone's big day only if it is just with a cake :) So this is a Vanilla cake filled with cappuccino mousse and white chocolate/vanilla mousse.

Michaels dream cookies

The recipe for these cookies I got from my Danish friend Michael . They where really easy and quick to make and tasted delicious. The only problem with them was the recipe, though Norwegian language is very close to Danish language there is a lot of difference i came to know reading this recipe. So I couldn't really manage to understand how they where suppose to look so they ended up like this. Not to bad I must say. These cookies are filled with raspberry jam, but it possible to fill them with any jam. I will make them again for sure, they are absolutely lovely. Mousse cakes are very popular here in Russia,and I can understand that of course they are delicious. And they are not really that complicated to make either. And the fun part about mousse cakes is that you can make them of any taste you like. I have tried out a lot of different taste and one of my favourites is these two cakes, a Chocolate mousse cake with dark and white chocolate on a nut meringue and a Blueberry yoghurt mousse on vanilla cake.

Cinnamon Brioche

Many years ago i was an apprentice to become a chef in a small Michelin restaurant called D'artagnan . I learned so much in that kitchen and i loved it all. All the French exclusive dishes that went out to the guests was so beautifully made and tasted like heaven. Still there is a few thing a remember more the others, one of them is the French pastry Brioche. I remember when they took them out of the oven and the smell was so lovely, and they looked so small and delicate. And they tasted so much more then normal Norwegian pastry,so much softer and full of taste from saffron and rich butter. So as nostalgic as i am i decided to make this French beauties ,not with saffron but with cinnamon. And i don't regret it, so tasty. So i recommend everybody to try out Cinnamon Brioche ones in their life .

I am very fond of testing out new recipes and tastes. So this is one of my testing projects. I have for a long time seen Whoopie pie recipes all over the net, and i have wanted to make them for a long time now. So finally i made them :) Another thing i have wondered how was tasting was Marshmallow Fluff . So i finally made that to. And i have had this flavored oils for some time and i haven't manage to try all of them out. So i off course had to try them as well. So i made whoopie pies filled with flavored marshmallow fluff. To be totaly honest i don't think i will make them again, they became so sweet i really thought i got diabetes there and then. When i use American recipes i normally use less sugar, in these ones i did as well but still the became really sweet. Might be they would be better with a fresher filling. But still i manage to test out all the things i have wanted for a long time so i am still happy. The oils i tested was banana flavor - very tasty,coconut flavor-my favorite, tutti frutti flavor- very children friendly,raspberry flavor- fresh and nice and cheese cake flavor- soft and round taste. I have also tested pistachio flavor- also one of my favorites,chocolate flavor- not tasty at all and orange flavor- fresh and nice taste.

Summer cake

Now that the strawberry season has started i thought it was time for a strawberry cake. I grew up in a village that had a few fields with strawberries, so when the summer vacation had started and the village was filled with the sweet smell of strawberries my friends and i couldn't manage to keep away from the sweet berries. But the thing was that in the daytime the fields was filled up with eager strawberry pickers. So we waited until the sun barley had gone under the horizon and run as fast as we could to the fields. Then we sat down in the middle of the field and enjoyed the sweet and juicy berries, and nobody could tell us that stolen berries dint tasted good. I have a lot of good memories about strawberries so it was not difficult to find inspiration to this cake. The cake is a Vanilla cake filled with New York Cheesecake and fresh strawberries.

Tasty test cake

A few weeks ago i sat and ate peanuts when my friend served me a wonderful cup of cafe latte. With the taste of salted peanuts in my mouth i drank the cofe, and the taste that came was one of the best i have tasted in a long time. i would never thought that cofe and peanuts would taste so perfect together. That is the idea of this cake Chocolate cake filled with caramel, salted peanuts and a mocha cream. The mocha cream is made from a cofe chocolate, it tasted a lot of cofe and very nice. I have wanted for a long time to learn how to make this type of big roses, so after several you tube clips this is the result. I have to practice more, but i had really a lot of fun making it.

A huge cake!!

This cake was for a lot of people and it really became huge.I think it must have been around 8 kg. I didn't have much time to make it but i am kind of happy with the result. It is not so easy to get cream cake as nice and smooth as rolled fondant, but i feel cream cakes is much more tasty. This cake is made of two layers of Vanilla cake and one layer of chocolate cake filled with apricots jam ,vanilla marinaded apricots and a white chocolate cream.

Profiteroles is a mouthful of deliciousness! And the best part is that is so easy to make. I know people might have a few problems when they bake them, but as long as you don't open the oven door before they are ready they turn out nice and fluffy. These ones i filled with a caramel cream, but you can make any cream you like. I recently made some that i filled with blueberry cream and some filled with apricots cream.

The worlds best cake

In Norway we have a cake called The worlds best, and it is really one of the best cakes you can get. Originally it is made a thin layer of vanilla cake topped with meringue and chopped almonds filled with thick vanilla cream. But i decided i wanted to make something else with this wonderful cake. So i made it like the original one with vanilla cake an meringue but i had a thin layer of caramel mixed with salted peanuts and a thick layer caramel cream. It was very delicious . Salted peanuts and caramel definitely belongs together.
Sorry for the poor picture quality, i guess i should stick to making cakes and make someone else take the pictures ;)

Turban

After a long break with not so much baking. I am back in my kitchen together with my beloved Kenwood machine. So this time my Kenwood and i came up with this cake. I have for a long time had this idea that i wanted to make a turban cake but i couldn't find the proper timing to serve a turban. I mean it is not like a cake you serve with your evening tea. But when I got invited to a birthday party and the birthday boy ( eh, man) wanted a Indian inspired cake i finally could make a turban cake. He hasn't actually seen it yet but i hope he will like it ! I wanted to try something new for this cake so i made a "very cherry cake" :)
It is made of Cherry cake filled with cherry-lemon curd and cherry-lemon cream. Very cherry.

In Norway for Christmas you are suppose to have at least 7 types of cookies, the cookies we normally make we only make at Christmas time. Somehow Norwegian Christmas is full of (strange) traditions , a mix of christian traditions and traditions from before christian time. If one can manage not to stress to much Norwegian Christmas can be the best time of the year. But unfortunately people goes a bit mad at this time and forget to enjoy all the good things that the Christmas brings. This December was kind of busy for me, i have been traveling so much the last month so when Christmas finally came it came as a shock. The only cookies i manage to make for Christmas this year was this melted snowmen cookies. They brought a lot of joy so hopefully nobody noticed that they where the only ones on the table. They are made of Sugar cookies with royal icing and melted marshmallow as a head.

Christmas is almost here and I am starting to feel a bit stressed out all the Christmas shopping and gift wrapping. And if thats not enough the days are really dark right now up here north, and i feel i could need a few more hours of sunlight each day.Thats why I got really happy when a friend of mine had birthday and wanted a sun-cake.He is from south India and is used to a bright sun all year long, so i guess he was hoping that a sun-cake would brighten up his day, I really hope it did :) I got at least very happy out of making it. Lamborghini

So here is another car cake,this time a Lamborghini. I never thought it would be s o difficult to make cars, i guess the most difficult part is to make them look the same on both side.It all start when you start to carve out the cake, just a few cm wrong cutting and you have to "glue" on some cake again. Especially on this car where it is so much details. And also very time consuming. BUT the great part is that is so much fun , i love to do all this small details , painting it in different colors and see it becoming more and more like a car(well, not always though) This cake is for a boy named Ilja for his 10 years birthday. He is playing a care game called Need for speed and his favorite car is a Lamborghini. I used a car from the game as a model. I really hope he enjoys the car as much as his game ;) The cake is made after Iljas choice, he wanted a Chocolate cake with cashew nuts filled with banana cream i also added a thin layer of light chocolate cream.

This is the first car cake i have made. I was thinking that it cant be so difficult, but so wrong can a person be. And since it was was suppose to be a Bentley as well i was struggling a lot. Thomas The Tank Engine

This is the first 3D cake i have made, it was not so difficult as i thought it would be. But a lot of work, but enjoyable work. It is not so easy to see it but the cakes are really big, i think both of them together is like 6-7 kg. It is for a boy who becomes 5 years old, and obviously his big hero is Thomas . His mother was very frighten that Thomas alone was to little cake , so late last night i made the wagon called Annie . Luckily i had a cake and cream ready. This chocolate squares is actually cake balls in square shapes. The original cake balls are kind of cool looking but i must say i like the squares much better. Cherry-lemon mousse cake

And once again thees Russians wanted a mousse cake. I am even out of new tast ideas , i think i have tried it all. So this time i made a simple mousse with cherry yogurt and lemon. I usual make a thin layer of vanilla cake at the bottom of the cake, but on this cake i made two layers of really dark chocolate cake. I had a lot of cherry juice on them and they became really moist and the cherry juice made the chocolate cake taste soft and nice. And i topped the Cherry lemon mousse cake with jelly made of sour cream and cherry juice. Decorated with pomegranate and silver leaf.

So i finally manage to make cake balls. I have wanted to make them for so long time. The great thing with them is that you can make them out of left over cake, but for some reason i never have any left over cake. So now i made a cake just for thees delicious cake balls. The dangerous thing with them is that if you have taken one it is impossible to stop, believe me i was forcing myself not to go to the fridge to check if they where ok.( Might have been some dangerous stuff in the fridge that could attacked them , never know ) They are made of Vanilla cake covered with white and dark chocolate.

Autumn is the most beautiful season of the year, all the colors and the cold air is really refreshing. Japanese fan

This cake i made for a sweet girl who became 3 years. Her favorite cartoon is called Luntik. I have no idea if Luntik is a male or female but here he/she is with friends:) The girl became very happy to see the cake and ate two of Luntiks four ears and one of his legs, and i am really not sure she ate any cake..... The challenge with this cake was not to make it, it was the two hours i had to have it on my lap in the backseat of a car on a bumpy Russian village road. Not recommended. But the cake made it and everyone (except the birthday girl) ate Vanilla cake filled with marinade cherries and cherry/orange mousse with pleasure.

This is a cake i made for a cake competition where the topic was ocean, this is what i came up with. It was really fun to make all the small details for it. And even though it was like 30-34 degrees in my kitchen i somehow manage. I guess i was dreaming of some cold ocean water somewhere . I finally had the opportunity to test out my new cake stuff, well some of it at least. This flowers are made with a silicon mould i got all the way from Australia. It is suppose to be apple flowers but this is how my flowers ended up.The cake itself is a Coconut cake filled with lime and pineapple mousse. In Moscow right now it is really hot so i wanted to make a light summer cake, but once again it became one of this heavy moist cakes. But my guests didn't seem to notice the heat around them, looked like they enjoyed the cake fully.

In Norway we have a cake called The worlds best, if you have ever tasted it you will understand why it is called that. Even when Jamie Oliver got this cake server when he was in Norway he very well understood why it is called the worlds best.

Normally this cake is made with a vanilla cake with meringue and chopped almonds on top, filled with vanilla cream. But since it is summer i decided to make a fresher version of the cake , i used the vanilla cake with meringue but used chopped walnuts instead , i made a citrus mousse inside and some sliced sweet strawberries. A really fresh cake.

Once again mousse cake! But even if it is a mousse cake it ended up with a really fancy color. It also tasted delicious really fresh and nice. So it will not be the last time i make a Blueberry vanilla mousse cake, but next time i think i will try with a hint of orange or lemon in it. Or maybe use a lemon cake inside not a vanilla cake. Or just try it all, i am sure it is a lot of volunteers for eating them.

Strawberry cake

The Norwegian strawberry season has just started. I cant Imagen anything better then sweet Norwegian strawberries, i can say with my hand on my heart that Norwegian strawberries is the best in the world. The not so warm Norwegian summer makes the strawberries incredible sweet and tasty. The berries on this cake is unfortunately not made with Norwegians berries when the first strawberries of the season cost as much as a small car. But the cake is still very tasty it is made of a Crunchy meringue nut cake with homemade vanilla cream and strawberries.

Eurovision 2010

This Eruovision song contest where held in Norway after our Norwegian hero Alexander Rybakk won the competition last year in Moscow. This year it didn't go so well, and we ended up in the lasts spots,witch is more normal for Norway then winning. Anyway I was invited to a Eurovision party, and of course we needed something sweet for the (sweet) music...... So this is some Eurovision muffins, they have all different taste Daim muffin,Chocolate muffin,Liquorish muffins and Vanilla muffins filled with vanilla cream.

Norway's national day is a very special day for all Norwegian. The celebration is very different from other countries national day. Even thou the national day is a celebration of a very big and serious day it is made into a celebration for children. Both adults and children are dressed up in their finest clothes or the Norwegian national dress Bunad. On this day the children are suppose to be allowed to eat as much ice-cream, sausages and cakes as they want to, they normally manages a lot of it all. This cake is decorated in the colors of the Norwegian flag. And it is made of Vanilla cake with Oreo cookies filled with strawberries, around the cake it is strawberries with chocolate and branches from birch.

Big birthday cake

This cake is for the same birthday party as the one on the picture under. It is made of White mud cake with roasted hazelnuts filled with orange marinaded cherries and white chocolate cream. This mud cakes are really heavy just the top cake on this is weighing about 1,5 kg.I love the taste of white mud cake it has so soft taste to it, and a bit compact. I found a white chocolate here with roasted hazelnuts, so it gets a nice and nutty taste to the cake.

They like the other cakes i like also of course, but when they get served a piece of mousse cake you can really see a Russian smile. Here in Russia they put what we call cake into two groups, one is tort another is pirog. When i came here they always asked me "Julie, can you please make cake for us?" So i made cake, and they ate it and liked it . So finally after many months of making cakes for my friends,one of them asked again " Julie , can you PLEASE make cake for us?" And i got a bit surprised because he was sitting there eating cake. And then he asked" Can you make cake with less dough in?" And then i finally understood that i have been making pirogs all the time not proper cake. So here is one more CAKE , not pirog, for my Russian friends. Last night i had a dream that i where running trough a field filled with cherry trees in full blossom. When i woke up i could still feel the soft smell of cherry flowers. So i decided to make a cake that will remind me of this beautiful dream. This sweet dream is made of a Swiss-roll filled with honey cream, served with cherry sauce.
